Varying Temperatures Generate Changes in the Aroma and Flavors of Sake

Aromatic Sake ― Chilling Aromatic Sake to excessively low temperature makes this fruity aroma less notable, while excessively high temperature loses the light and refreshing flavor. Therefore, the ideal temperature range for Aromatic Sake is between 50 degF ~ 59 degF.  
 
Refreshing Sake ― Refreshing Sake when chilled exudes a more notable refreshing aroma and flavor. Among the four types, the lowest temperature range of 50 degF ~ 59 degF is ideal. However, some Generic Sake along with sake of the Honjozo standard between 113 degF ~ 122 degF are suitable as hot sake, thus recommended for consumers who prefer sharp and dry sake.   
 
Pure Sake― To draw out the unique, umami flavor and full body of Pure Sake, do not chill too long. The ideal temperature range for Pure Sake is near room temperature between 59 degF ~ 68 degF. Also, Pure Sake is also suitable for low warm sake. The true way to enjoy Pure Sake is to savor the umami flavor, activated by heating Pure Sake!    
 
Mellow Sake― Low-temperature range is ideal for Mellow Sake with light fragrance and flavor, while higher temperature range is recommended for Mellow Sake with rich fragrance and flavor, and between 59 degF ~ 77 degF is ideal as hot sake. Also, some Mellow Sake can be enjoyed near body temperature around 95 degF. 
 
 
温度の違いで変化する香りや味わい
 
薫酒―冷やしすぎるとフルテーな香りが感じにくくなり、温度が高すぎると軽快でスッキリした味わいが損なわれてしまう。よって、摂氏10~15度が薫酒の理想的な温度帯になる。
 
爽酒―すっきりした香味の爽酒は、冷やすことでより美味しく感じられる。4タイプの中では最も冷たい温度帯となる摂氏5~10度が理想。ただし、普通酒や本醸造酒規格のものは摂氏45~50度の燗酒に向くものもあるので、キリッとしまったドライな熱燗を好む人にはお勧め。
 
醇酒―持ち味である旨味やコクを引き出すには、冷過ぎないこと。摂氏18~20度の常温に近い温度帯が醇酒の理想。また、ぬる燗にも向いている。温めることで活性化する旨味をじっくりと呑む。これぞ、醇酒の飲み方の真骨頂!
 
熟酒―熟酒の中でも、軽快な香味のものはやや低めの温度帯、重厚な香味のものはやや高めの温度帯が好ましく、摂氏15~25度が熱燗の理想。また、人肌に近い摂氏35度前後で楽しめる熟酒もある。
